pyr8queen said she wanted ratatouille like the in the movie for Valentine's Day. When i explained to her the difference between cartoons and the real world, she was disappointed. So I set out to toe beat that previously uncrossable gamp, and here it is. Actually it was the best thing I made last night, so here's the recipe. 

Get a yellow squash, a red pepper, a zucchini, a Japanese eggplant, a yellow onion, two cloves of garlic, 1 cup of tomato paste, 2tbsp of olive oil, and a 10” dish. Fresh thyme, too. And a bit of goat cheese.

Preheat oven to 375F.
Chop the onion fine, and chop the garlic cloves.
Trim the ends off the vegetables, and carefully remove the seeds from the pepper to make a tube. Use a mandolin slicer to slice the squash, zucchini, pepper and eggplant into very thin slices.
Mix the onion, garlic 1tbsp of olive oil and tomato paste and spread it in the bottom of the dish. Alternate the slices very carefully so only the edge of each shows in concentric circles in to the center of the dish. Drizzle 1tbsp of oil (I used garlic-and-thyme flavored oil) on the top, and then scatter the leaves of the thyme on top. Cut a piece of parchment exactly the size of the inside of the dish, and place it on top.
Bake the ratatouille at 375F for 45-55min, until the tomato is bubbling, and the veggies are soft but not brown.
Slice and serve with a bit of goat cheese crumbled on top, preferably on top of rice or the grain of your choice.

Wow, that sounds fantastic! LOL, I'm with your wife; I've been wanting the ratatouille like in the movie too. Thank you for figuring out the recipe :)
