French vs. English

I'm cooking tonight's Westeros-themed feast. Searching around for Medieval recipes, most of my sources are English, since relatively few French cooking manuals from the Middle Ages have been translated or at least, are readily available.

I had a moment of insight while making a cheese-and-onion pie. Everywhere the French would sautee something, the English boil it. French chef, "Ah, some flavor - let me enhance it with heat and oil!" English chef, "Oh dear. Some flavor. Let me boil that right off!"
